Chicken Cordon Bleu Bake

Ingredients
– 1 lb. any pasta
– 1 cup chicken breast, cooked and cubed
– 1 cup ham, cooked and cubed
– 1.5 cups milk
– 8oz. cream cheese, softened
– 2 Tbsp dried minced onion
– 2 cups swiss cheese, shredded
– Salt, pepper, creole seasoning
– 1 cup panko crumbs (I like the garlic flavored ones)
– 0.5 cup butter, melted

Directions
Bring a large pot of boiler water to a boil over med-high heat; Salt it and add pasta; Cook until al dente (about 11 minutes- I use whole wheat pasta which tends to take a little longer to cook than regular pasta); Drain and return to the pot; Add in the chicken and ham and toss to combine; Preheat boiler; In medium saucepan, combine the milk, cream cheese, and minced onion over low-medium heat.; Cook, stirring frequently, until it becomes a smooth texture (about 5 minutes); Stir in the Swiss cheese  and season with the salt, pepper, and creole seasoning to taste; Transfer pasta to a baking dish and tops with panko crumbs; Pour the melted butter over crumbs and broil until browned (I gave it about 4-5 minutes); ENJOY!


Chunky homemade tomato soup with chopped basil and garlic and a dash of olive oil

Beef & Rice Soup

Ingredients
– 1 lb. of ground beef or turkey
– 28 oz. can diced tomatoes
– 1/2 cup uncooked rice
– 1 cup chopped celery
– 2 tbsp. chopped green pepper or 1 pepper
– 1 envelope dry onion soup mix
– 3 beef bouillon cubes
– 1/2 tsp dried basil leaves, crushed

Directions
– Brown meat with garlic salt & pepper,  drain off fat
– In large saucepan put 4 cups of water, ¼ tsp. salt and remaining ingredients except rice
– Bring to a boil, lower heat, and simmer 30 minutes
– Add hamburg, simmer 5 minutes
– Add rice, cover and simmer 20 minutes

Pork Roast Gravy

Ingredients
– 1 cup (small jar) Apple jelly
– 1 cup ketsep
– 2 tblspn cider vinegar
– 2 tsp chili powder

Directions
– Rub pork roast w/ chili powder and bake as desired
– To make pork sauce…. mix all ingredients together in med size pan over low-med heat until sauce thickens. (I usually put a bit of sauce over roast during last 5-10 min in oven as well)
– When done, use sauce as gravy on your pork and enjoy!

Broccoli Casserole

Ingredients
– 2lb bag frozen Broccoli cuts
– 1lb Velveeta cheese
– 2 sticks butter
– Ritz crackers

Directions
– Put frozen broccoli in baking pan
– Melt Velveeta w/ 1 stick of butter and pour over broccoli
– Mix 1 stick of melted butter w/ (chopped up) crackers and pour on top of broccoli
– Bake at 350 for ½ hour or until bubbly ENJOY!
